How to Blend the Perfect Smoothie with Whitney Thornburg

Our Design Director, Whitney, recently invited us over to shoot an installment of our At Home series. While we were exploring her impeccably styled and sustainably designed spaces, she shared her love for homemade smoothies, so we had to ask her how she does it. Follow along for the perfect blended beverage.

Whitney: "I love smoothies as a refreshing weekend snack or a quick breakfast. I tend to use what I have on hand, and have found they are a great way to use up the last bits of sweeter veggies and fruits before they go bad. My kids love helping to make them and were the first way they started to use knives in the kitchen when they were only preschoolers."

Here’s my basic recipe:

  • 1 cup yogurt - any kind can work. It’s less sweet if plain is used. Our favorite is vanilla.
  • Generous handful of spinach - great way to add more greens into your diet for the day
  • Chopped Carrot - another great way to add in vegetables
  • About 2 cups of fruit - either fresh or frozen. I froze a lot of strawberries at peak season so we usually use these along with other fresh fruit in the household like apples, raspberries, mango and blueberries.
  • Half a squeezed lemon or lime
  • 2-3 seeded dates - the more you add the sweeter the smoothie will taste. Great way to sweeten up if using plain yogurt.
  • Half cup of ice
  • Water to thin if needed, pending other ingredients (and how you like it. Note, too much ice & water can dilute the flavor so add slowly and taste)

I also sometimes add half an avocado, which makes the smoothie creamier, nuts or nut butter which add protein, especially if I’m short on yogurt. Then blend all together until smooth, I simply use the “smoothie” option on my blender. Enjoy!
