If you are anything like me, you want to spend every.sunshiny.second outside. Actually, if I’m being totally honest, sunshine doesn't matter. A field trip or beach hang out in summer rain ain't that bad either. Few things bring out that yearning for adventure and picnics as the onset of summer does.
Do you wish to fuel these gorgeous days with food filled with good-for-you-ness that adds spark instead of making three times a day withdrawals from your energy account? But maybe you have no idea how to make it happen? (I know the feeling!) Enter: The -fully loaded- Greenylicious Sandwich. This creation will swoop in and save your picnic in a jiffy!
Green Pea Hummus
1/2 cup white beans
1/2 cup green peas, fresh or frozen + thawed
1 large handfull fresh basil
1 small handfull cilantro
1 clove garlic
1 tbsp dark or light miso
1/4 cup tahini
3 tbsp virgin olive oil
1. Add all ingredients to a food processor or high speed blender and blend until smooth. Add salt to taste if you wish. Store in an air-tight container in the fridge for 4-5 days or enjoy instantly.
For The Sandwiches
Dark rye sourdough bread or other bread of choice
Green pea hummus, recipe above
Kale or other greens
Dairy / plant-based cream cheese or the like
Flaky sea salt
1. Spread a generous amount of green pea hummus on two pieces of bread. Add some kale, sliced avocado, cucumber, a big pile of microgreens and if you feel like it, some plant based or dairy cheese of some kind. Finishing off with a sprinkle of chili flakes and flaky sea salt is terrific too. Have fun picnicking!
